COUNTRY RANCH POTATOES

1 lb red skin potatoes, small dice no larger than 1/4 inch
2 tbsp extra virgin olive oil
1/3 cup chicken broth
1 medium red onion, diced
4 bacon slices, cooked, drained and crumbled
1/3 cup ranch dressing
2 tbsp Southwest Chipotle seasoning
2 tsp garlic powder and parsley flakes

Add oil to pan and heat to medium-high. Add potatoes and cook, stirring frequently, for 5 minutes. Add the roth and simmer for 5 minutes or until broth is almost gone. Add onions, spices and bacon to pan and cook for another 2 minutes.

Remove from heat, place in bowl and let sit for 1 minute, then toss in dressing and serve.

Note: Be sure the potatoes are not too hot or the dressing will break (turn to oil).
