MARDI GRAS GRILLED CAJUN CHICKEN

1 tsp salt, cayenne pepper and paprika
1/2 tsp white and black peppers and oregano
1/4 tsp garlic and onion powders
1/2 cu lemon juice
1/4 cup vegetable oil
4 boneless, skinless chicken breasts

Combine spices in a bowl. In a shallow dish, place chicken in a single layer. Combine lemon and oil and half the spices. Pour over chicken, turning to coat.

Marinate 30-60 minutes or at room temperature 2-3 hours in the refrigerator, covered. Drain chicken from marinade and sprinkle both sides of the chicken with remaining spices.

Cook on grill with the thin ends away from the flames. Cook, turning once, until just cooked through, 3-8 minutes per side. Serves 4
