HONEY-GINGER MARINATED PORK TENDERLOIN

1/4 cup soy sauce and apple juice
4 cloves garlic, minced
1 tbsp minced fresh gingerroot
2 tsp sesame oil
1 1/2 pounds pork tenderloin
1/2 cup honey
1 tbsp cider vinegar
1/2 tsp salt
Combine soy sauce, apple juice, garlic, ginger and sesame oil in a large, resealable plastic bag. Add pork, press air out of bag and seal. Shake gently to coat thoroughly and marinate 1 hour or overnight in refrigerator.
Preheat oven to 400. Remove pork from bag; discard marinade. In a small bowl, whisk together honey, vinegar and salt. Brush pork with mixture. Place on a rack in a roasting pan and bake for 35 minutes or until thermometer reads 160°F. Let pork rest for 5 minutes before slicing. Serves 6 NOTE: Thicken juices with cornstarch and water.
