ITALIAN CHESE PIE

Category: Pies - Cream and Custard

6 eggs
1/2 cup sugar
1/2 tsp vanilla extract
1 (15 oz) container ricotta cheese
2 tsp grated lemon peel
1 unbaked 9 inch pie shell

Preheat oven to 350. In a bowl, beat the first 5 ingredients until well blended. Pour into pie shell and bake 60-65 minutes or until filling is set and edges are golden. Let cool for 4 hours and serve. If not serving right away, cover chill until ready to serve.

NOTE: The center of the pie may fall slighltly after it is taken out of the oven.
