HERBED GOAT CHEESE AND PROSCIUTTO SHRIMP

12 tbsp goat cheese
1 tsp chopped fresh parsley, tarragon, chervil and oregano
2 tsp minced garlic
Salt and pepper
12 large shrimp, peeled, tail-on and butterflied
12 thin slices prosciutto
2 tbsp olive oil

In a mixing bowl, blend the cheese, herbs and garlic. Season with salt and pepper. Season the shrimp with salt and pepper.

Press 1 tbsp of filling in the cavity of each shrimp. Wrap each shrimp tightly with 1 piece of prosciutto. Heat the oil in a large skillet over medium-high heat. Add the stuffed shrimp and sear for 2-3 minutes on each side, or until the shrimp turn pink and their tails curl in toward their body. Remove from the pan and place on a large plate. Makes 12 stuffed shrimp
