POTATO HAMBURGER CASSEROLE - Easy

1 lb ground beef
1 medium onion, chopped
1-2 cloves garlic, minced
Salt and pepper
1 can condensed tomato soup
1 1/3 cups water
2 tbsp butter
1/2 cup milk
1 1/3 cup mashed potato flakes
1 egg, beaten
1/2 cup shredded cheddar cheese

Preheat oven to 350. In a skillet, cook beef, onion and garlic until thoroughly cooked, stirring frequently. Drain. Stir in next 3 ingredients. Spoon into an ungreased 1 quart casserole.

In a medium saucepan, bring water, butter and 1/4 tsp salt to a rolling boil. Remove from heat. Add milk and potato flakes with a fork until potatoes are desired consistency. Stir in egg until well blended. Spoon potatoes in mounds over beef mixture. Sprinkle with cheese. Bake for 25-30 minutes. Serves 4
