TURKEY SPINACH SALAD

Dressing
3/4 cup oil
1/4 cup red wine vinegar
1 tbsp chopped chives
1/4 tsp salt and pepper

Salad
1 lb fresh spinach, cleaned and chilled
3 cups cooked diced turkey
3/4 cup red onion, quartered, sliced
1 1/2 cups ripe olives, wedged
3 tbsp feta cheese
3/4 cup chopped walnuts
1 1/2 tbsp croutons

Mix dressing ingredients in jar or bottle.
Tear spinach into pieces. Toss with turkey, apples and nuts. Pour on dressing. NOTE: Substitute above dressing for 1 cup Italian dressing.
