GERMAN STYLE BEEF BRISKET

1 (2 1/2 lb) beef brisket
4 1/2 cups sliced baking apple (about 2)
2 3/4 cups sauerkraut, drained
1 tsp caraway seeds
1 (14 oz) can chicken broth
10 medium red potatoes, quartered

Trim fat from brisket. Place meat on a rack in a roaster coated with cooking spray. Arrange apples over meat and spoon sauerkraut over apple. Sprinkle with caraway seeds. Drizzle broth over and around brisket. Cover and bake at 325 for 1 1/2 hours.

Arrange potatoes around meat and baste potatoes and meat with pan juices. Cover and make 2 more hours or until potatoes are tender. Transfer meat to a platter. Arrange everything in the pan around the meat. Drizzle with some of the pan juices. Serves 8
