SAUSAGE AND PEPPER CALZONES

1 lb Italian sausage, casing removed
Olive oil
1 Each small onion, red and green bell peppers, julienned
2 tbsp chopped garlic
2 cups each ricotta, mozzarella and parmesan cheese
Pinch crushed red pepper
4 individual 6 inch pizza dough rounds

Preheat oven to 375. Saute sausage until brown. Remove from heat and drain and cool completely. Saute vegetables in the olive oil. Season with salt and pepper. Add garlic and remove from heat. Cool completely.

In a mixing bowl, combine all the ingredients. Mix well. Season with additional salt and pepper. Using a fork, dock each round of dough.

Divide the mixture into fourths and place in the center of each round of dough. Fold one end of the dough over the other, forming a half-moon shape.

Using a fork or your fingers, press the ends together to seal completely. Place on a parchment-lined baking sheet. Bake until golden brown, about 20-25 minutes. Remove from the oven and serve warm. Makes 4
