PORK TENDERLOIN WITH PARMESAN CRUST

1 (15 oz) whole pork tenderloin
1/2 cup flour
1/2 tsp salt and pepper
1/2 cup butter, divided
1 shallot
1/2 cup dry white wine
1/4 cup shredded parmesan cheese and fine bread crumbs
Preheat oven to 375. Slice tenderloin into 1/4 inch slices and pound thin between sheets of waxed paper.
Combine flour, salt and pepper. Dip meat into flour mixture and saute very quickly in 2 tbsp butter. Place in a single layer in an 11x9 inch baking dish.
Dice shallot, saute; add white wine and deglaze pan. Add to baking dish. Mix cheese, bread crumbs and 1/4 cup butter. Make a long of the mixture, slice and press 1 slice on top of each slice of pork. Bake for 15-20 minutes.
