LEMON SNOWBALLS

1/2 cup shortening
2/3 cup sugar
2 tsp finely grated lemon peel
1 egg
3 tbsp fresh lemon juice (strained)
1 tbsp water
1 3/4 cups flour, sift before measuring
1/4 tsp baking soda
1/4 tsp cream of tartar
1/2 tsp salt
1/2 cup finely chopped pecans
1 cup confectioners sugar, sifted

Cream shortening and sugar; beat in lemon rind and egg. Stir in lemon juice and water. Sift together the flour, baking soda, cream of tartar, and salt. Stir into batter; stir in chopped nuts. Sift the confectioners sugar into a shallow bowl; set aside.

With floured hands, shape dough into small balls. Place about 1 inch apart on ungreased baking sheet. Bake cookies at 350° for 10 to 15 minutes, until just browned on bottom. Remove cookies from baking sheet immediately and roll in the confectioners sugar. Makes about 3 to 4 dozen cookies.
