PEANUT BUTTER CHEESECAKE MINIS

Crust
1 1/2 cups graham cracker crumbs
1/4 cup butter, melted
4 tbsp sugar
12 bite-size peanut butter cups

Filling
2 (8 oz) pkg cream cheese, room temperature
1 cup sugar
1/4 cup flour
1 tsp vanilla or almond extract
2 eggs

Preheat oven to 350. Place a paper cup-cake liner in each cup of a standard muffin pan. Combine first 3 ingredients until crumbs are moistened. Press crust into bottom of each cup an place 1 peanut butter cup into center.

Beat cream cheese until fluffy. Add next 3 ingredients, beating well. Add eggs, 1 at a time, beating well after each addition. Spoon mixture over peanut butter cups. Bake until just set, about 20 minutes. Allow to cool completely before serving.
