HONEY ROASTED PORK LOIN

4 lb boneless pork loin
Salt and pepper, to taste
1/2 cup honey
4 tbsp orange juice and olive oil
1 tsp thyme
1 cup chicken broth

Preheat oven to 375. Season pork and place in a roasting pan. In a separate bowl, mix together next 3 ingredients and pour over roast. Add broth to the pan. Bake to 150 degrees, about 45-60 minutes. Baste frequently. Strain the pan juice into a saucepan. Reduce until slightly thickened. Serve over sliced roast. Serves 4-6
