PORK FAJITA KABOBS

2 lbs pork tenderloin, cut in 1 inch cubes
2 tsp paprika
1 1/2 tsp ground cumin and oregano
1 tsp garlic powder
1/8 to 1/4 tsp crushed red pepper flakes
1 small green pepper, cut into cubes
1 small onion, cut into eight wedges
8 large fresh mushrooms
16 grape tomatoes
8 (8 inch) flour tortillas, warmed
3/4 cup chunky salsa

In a resealable bag, combine spices and add pork. Seal bag to coat. On eight skewers, alternate the pork and vegetables.

Grill, covered, over medium heat for 5-8 minutes on each side or until meat is not longer pink and vegetables are tender. Place each kabob on a tortilla; remove skewers and fold tortillas in half. Serve with salsa. Serves 4
