CHOCOLATE FUDGE SNACK CAKE

Cake
1/2 cup butter
1 (11.75 oz) jar hot fudge ice cream topping
1 1/2 cups flour and sugar
1 cup mashed potato flakes
1 tsp baking soda
3/4 cup buttermilk
1 tsp vanilla extract
2 eggs
1 cup finely chopped walnuts
1 cup semi-sweet chocolate chips
Glaze
1/2 cup sugar
1/4 cup buttermilk and butter
1 1/2 tsp light corn syrup
1/2 tsp baking soda
2 tbsp chopped walnuts
Cake: Preheat oven to 350. Grease a 13x9 inch baking dish. In a small saucepan over low heat, melt 1/2 cup butter and fudge topping, stirring constantly until smooth. Lightly spoon flour into measuring cup; level off.
In a bowl, combine flour and remaining cake ingredients except walnuts and chocolate chips, beat at low speed until well blended. Add fudge mixture; beat 2 minutes at medium speed. Stir in nuts and chips. Pour batter into pan and bake 40-45 minutes.
Glaze: In a saucepan, combine ingredients except extract and nuts. Bring to a boil over medium heat. Reduce heat; simmer for 5 minutes or until golden brown, stirring constantly. Remove from heat; stir in vanilla. Pour glaze over warm cake, spreading to cover. Sprinkle with nuts. Serve warm or cold.
