SPINACH SALAD WITH STRAWBERRIES AND ORANGES

1 lb spinach leaves, washed with stems removed
3 green onions, chopped
2 cups whole strawberries
1 small can mandarin oranges, drained
1/4 cup cashews, coarsely chopped
3 tbsp honey
1/2 tsp salt, dry mustard, paprika, celery salt and oil
2 tbsp vinegar

Dry washed spinach by rolling in a towel. Refrigerate it to make it crisp. Wash, hull and drain the strawberries. In a large bowl, combine the spinach and next 4 ingredients.

To make dressing: Beat all ingredients in a food processor or blender until emulsified. Do not pour the dressing over the salad until read to serve or the spinach will be limp. Serves 6
