STEAK SANDWICHES WITH SAUTEED MUSHROOMS

4 tbsp olive oil
4 (5-6 oz) cube steaks
3 cups thinly sliced mushrooms
2 tsp dried savory
8 green onions, sliced
1 cup beef broth
4 thick slices bread, toasted

Heat 2 tbsp oil in a skillet over high heat. Season steaks with salt and pepper. Add steaks to skillet and sear 1 minute per side. Transfer to plate.

Reduce heat to medium. Add remaining oil to same skilled. Add mushrooms and savory and saute until mushrooms are brown, about 4 minutes. Add onions and saute 1 minute. Add broth and simmer until liquid thickens slightly, about 8 minutes.

Return steaks and any juices to skillet. Reduce heat to medium-low. Cover, skillet and simmer until steaks are cooked through, about 5 minutes. Arrange toast on plates. Top with steaks then spoon mushroom sauce over meat.
