ENCHILADA CASSEROLE - Crock pot

2 lbs ground beef
1 medium onion, chopped
1 clove garlic, minced or 1 tsp garlic powder
1 (4 oz) can mild chopped green chilies
1 (15 oz) can tomato sauce
2-3 tbsp chili powder or to taste
Salt and pepper, to taste
8 flour tortillas
1 can cream of chicken soup
3/4 cup milk
2 cups shredded sharp cheddar cheese
In a skillet, brown beef, onion and garlic; drain fat. Add chilies, tomato sauce, chili powder, salt and pepper. Heat thoroughly. Spray crock pot with cooking spray. Line with 2 tortillas. Cover with 1/3rd meat mixture and cheese. Layer 2 more times ending with tortillas.
Combine soup and milk and pour over tortillas. Sprinkle with remaining cheese. Cook on LOW for 4-5 hours.
NOTE: I like it better baked at 350 for about 30 to 45 minutes.
