TORTELLINI SOUP

1 tbsp each butter and olive oil
1 cup each sliced mushrooms, celery, onion and carrots
1 clove garlic, minced
2 cups vegetable or chicken broth
3 cups water
1 (14.2 oz) can Italian style stewed tomatoes
2 cups frozen cheese tortellini
1 (10 oz) pkg frozen chopped spinach, thawed, drained and squeezed dry
Salt and pepper, to taste
Grated parmesan cheese, garnish

Saute vegetables and garlic in butter until tender. Add next 3 ingredients and bring to a boil. Add pasta; return to a boil. Reduce heat and simmer, about 10 minutes. Stir in spinach and season, return to a boil. Garnish servings with grated cheese.

NOTE: I like to add chopped chicken and boil it in the broth and water until cooked through before adding the tomatoes.
