ROASTED GARLIC ANGEL HAIR PASTA

3 large garlic heads
1 tbsp butter
1/4 cup Dijon mustard
1 medium tomato, seeded and chopped
2 tbsp lemon juice
8 oz angel hair pasta, cooked and drained
1/8 tsp black pepper
1 cup broccoli florets, juilienned zucchini and sliced mushrooms
1 (2 1/4 oz) can sliced black olives, drained
3/4 cup shredded parmesan cheese
Spray each garlic heat with cooking spray and wrap separately in foil. Place in a small baking pan and bake at 400 for 45 minutes. Cool in foil for 10 minutes.
Separate cloves and squeeze cloves to extract pulp, discarding skins. In a food processor, puree garlic pulp and next 3 ingredients. Set aside.
In a skillet, saute vegetables in butter until tender-crisp, about 3 minutes, add garlic mixture, water and tomato. Add the olives and reduce heat to low and cook. Stir until sauce is heated through then toss with cooked pasta and sprinkle with cheese. Continue tossing until cheese melts. Serve immediately. Serves 4
