PEPPERY GARLIC SHRIMP WITH SHERRY SAUCE

1 cup dry sherry
10 tbsp olive oil
4 tbsp lemon juice
6 clove garlic, minced
1/4 – 1/2 tsp cayenne pepper
Salt and pepper
6 tbsp chopped parsley
24 oz shrimp, shelled and deveined
Steamed rice
Boil sherry, 2 tbsp oil and next 3 ingredients until reduced to 1/2 cup, about 7 minutes. Transfer to a food processor. With the machine running, gradually add 6 tbsp oil and blend until a smooth sauce forms. Season with salt and pepper. Add parsley and pulse to blend.
Heat remaining 2 tbsp oil in a skillet and add shrimp. Saute just until cooked through. Place a serving of rice on each place, divide shrimp between plats and top with sauce. Serves 4
