1 lb Yukon potatoes, diced, boiled until tender
3 oz bacon, diced
2 shallots, diced
1/2 cup celery, diced
1 1/2 cups mayonnaise
1/2 cup Dijon mustard
2 tbsp white wine vinegar
1 1/2 tsp Worcestershire sauce
4 medium boiled eggs, chopped
6 tbsp olive oil
1 tbsp red wine vinegar
1/8 tsp tarragon
Salt and pepper, to taste

Cool the potatoes. In the meanwhile, saute the bacon and add the onions, cooking until tender. Add celery and eggs to potatoes. In a large bowl, mix remaining ingredients, folding in the potato mixture.
