Shelly's Recipe

DESSERT CHAMPAGNE

1 (8 servings) pkg or 2 (4 servings) pkg sparkling white grape-flavored gelatin (see Note)
1 1/2 cups boiling water
2 cups cold seltzer or club soda
1 (11 oz) can mandarin orange segments, drained
1 cup sliced strawberries

Place the gelatin in a large heat-proof bowl and add the boiling water, stirring until the gelatin is completely dissolved. Stir in the cold seltzer. Chill for 1 1/2 hours, or until slightly thickened. Add the oranges and strawberries, blending well. Pour into a 6-cup mold or 8 to 10 champagne glasses. Cover and chill for at least 4 hours, or until firm. Serves 8

NOTE: If sparkling white grape-flavored gelatin isnt available, any flavor will work.
