HERB-CRUSTED ROAST PORK TENDERLOIN

1 lb pork tenderloin, trimmed
1 tbsp butter and olive oil

Herb and garlic rub - Mix together:
1 cup minced parsley
1 tsp thyme and rosemary
½ tbsp minced garlic

Preheat oven to 350. Rub roast with the rub mixture. Brown tenderloin in a hot pan with butter and olive oil; then remove and let rest. Place on a rack and roast allowing air to vent underneath for 20-25 minutes. Roast for 155 degrees. Pull out of oven and let rest about 10 minutes before slicing. Serves 4
