LEMON BUTTER PARSLIED POTATOES

2 lb small potatoes
1 lemon, grated for 2 tsp peel and 2 tsp lemon juice
4 tbsp unsalted butter
4 tbsp chopped parsley, divided
1 tsp salt
1/4 tsp pepper
2 clove garlic, minced

In a saucepan, add the potatoes and enough salted water to cover; heat to boiling over high heat. Boil, uncovered, 8-10 minutes or until potatoes are tender. Drain and allow to cool enough to handle. Cut into about 1/2 inch slices.

In a skillet, melt butter and add lemon peel and juice, 2 tbsp parsley, pepper and potatoes. Cook 4-5 minutes or until potatoes begin to brown, stirring occasionally. Add garlic and cook for 1 minutes. Sprinkle with remaining parsley before serving. Serves 4
