THAI CHICKEN APPETIZER SKEWERS

1/4 cup lime juice and Italian salad dressing
1 tbsp soy sauce
1 lb boneless, skinless chicken breast halves
1/3 cup purchased unsweetened coconut milk
1/4 cup creamy peanut butter
3 tbsp lime juice
2 tbsp chicken broth
2 cloves garlic, finely chopped
1/8 – 1/4 tsp ground red pepper
Combine first 3 ingredients in a bowl. Set aside. Rinse chicken; pat dry. Slice chicken across grain into 3 inch long strips, 1/4 - 3/8 inch thick. Thread chicken, accordion style, onto 12 (6 inch) metal skewers. Set aside.
Sauce: combine coconut milk and next 5 ingredients in a small saucepan. Cook and stir over medium heat until slightly thickened, smooth and bubbly. Keep warm.
Grill on a rack, uncovered, directly over medium heat, 8-10 minutes or until chicken is tender and no longer pink, turning once and brushing often with soy mixture during last 15 minutes of cooking.
NOTE: Can be broiled, 4-5 inch from heat source for 8-10 minutes, turning once and brushing often with soy mixture during last 5 minutes of cooking. Serve sauce with skewers. Garnish with crushed red pepper flakes, if desired. Serves 12
