SPICY SHRIMP PASTA

1 medium onion, chopped finely
3/4 cup red pepper chopped finely
1/2 medium green pepper, chopped finely
3 tbsp olive oil
salt and pepper
cayenne pepper or Cajun seasoning, to taste
1 medium ripe tomato, chopped finely or 1 tbsp ketchup
6 cloves garlic, minced
1 tbsp butter
1 lb shrimp, peeled deveined and cooked
1 lb cooked noodles (short pasta, bow ties, rotini or cork screws)
1/4 cup grated Parmesan and shredded cheddar cheeses
chopped flat leaf parsley

Saute onions, peppers in olive oil and lightly season with salt pepper cayenne pepper and Cajun seasoning and saute til onions are translucent.

When veggies are crisp tender and onions are translucent add tomato or ketchup, butter and garlic and more seasoning lightly and saute another 2 to 3 minutes.

If noodles are cold add them next; if they are hot then add shrimp next and mix well until heated through and then add noodles and adjust seasonings again. (all seasonings, not just salt and pepper, but cayenne and Cajun seasoning as well).

Warm through completely until hot. Sprinkle with more Cajun seasoning and add cheese to top of dish and spoon onto dishes. Garnish with parsley. Serves 4-6
