1 stick butter, melted
1 cup sugar
1 egg, well beaten
2 cups flour
1 tsp baking soda
3 large very ripe bananas, mashed
1 tsp vanilla
2/3 cup chopped pecans
Orange Butter:
4 oz cream cheese
4 oz butter
1 tbsp orange juice concentrate
Zest of one orange
Combine all ingredients in mixing bowl. Mix with wooden spoon and pour into a well-greased 9x5x2 inch loaf pan. Bake at 375 for one hour.
Orange Butter Topping: Soften the cream cheese with a fork. Blend in the margarine. Add the orange juice and zest till well blended. Chill. Serve with warm banana nut bread.
