PORK CHOPS WITH CARAMELIZED ONIONS

1 tbsp vegetable oil
4 pork loin chops, about 1/2 inch thick
3 tsp seasoned salt
2 tsp pepper
1 onion, cut into strips
1 cup water

Rub chops with 2 tsp salt and 1 tsp pepper. In a skillet, brown chops on each side in oil over medium heat. Add onion and water to the pan. Cover, reduce heat, and simmer 20 minutes.

Turn chops over and sprinkle with remaining salt and pepper. Cover and cook until water evaporates and onions turn light to medium brown. Remove chops from pan and serve onions on top. Serves 4
