SUMMER CUCUMBER SALAD

4 large cucumbers
8 radishes, thinly sliced
1/2 cup crumbled feta cheese with basil and tomato
1/3 cup zesty Italian dressing
1/3 cup pitted kalamata olives
1/4 cup chopped red onion

Slice 1 of the cucumbers into long thin ribbons using a vegetable peeler; set aside. Peel remaining cucumbers into 1 inch cubes.

Toss with remaining ingredients. Place mixture in center of serving platter. Arrange reserved cucumber ribbons around edge of platter. Serves 7
