STRAWBERRY-CITRUS CHICKEN SALAD

1 lb boneless, skinless chicken breasts
Salt and pepper, to taste
Sliced strawberries
Navel orange segments
Sliced red onion
Sliced romaine lettuce

Strawberry-Balsamic Vinaigrette:
11/2 cups strawberry preserves
1/4 cup EACH white balsamic vinegar and olive oil
1/4 tsp EACH crushed rosemary, salt and pepper

Gill covered with grill lid, over high heat 5-6 minutes on each side or until done. Let stand 10 minutes, cut into 1/2 inch thick slices. Fill individual serving dishes evenly with lettuce; top with salad ingredients. Serve salad with vinaigrette.

Strawberry-Balsamic Vinaigrette: Pulse all ingredients in a blender 5 or six times or until smooth.
