GARLIC PANFRIED CATFISH – SOUTHERN STYLE

1 1/2 lbs catfish fillets
1 egg
Garlic salt
1/2 cup flour and cornmeal
Cayenne pepper, salt and pepper
Vegetable oil

Heat skillet with 1 inch oil. Mix flour, corn meal and salt and pepper together in a flat dish. Rinse fish. Beat egg and dip fish in egg. Sprinkle both sides with garlic salt and cayenne pepper. Dip in flour mixture twice. Put fillets in oil and cook until golden brown and tender in the middle, about 8-12 minutes. Take fillets out of skillet and drain on paper towels.
