PORK CHOPS WITH SPICED ONION MARMALADE

1/2 cup ketchup
1/4 cup honey and brandy
2 tbsp Dijon mustard
3 clove garlic, minced
6 pork chops

Spiced Onion Marmalade
1/4 cup oil
1 lb Vidalia onions, coarsely chopped
2 clove garlic
1/2 cup balsamic vinegar
1/4 cup brown sugar
2 tbsp tomato paste
1/2 tsp ground ginger
1/4 tsp nutmeg and cloves

Whisk first 5 ingredients and marinade chops for 4 hours. Prepare marmalade. Season chops with salt and pepper and grill. Top each with marmalade.

Marmalade. Saute onions and garlic in oil. Add vinegar and brown sugar, stirring occasionally and cooking for 5 minutes. Stir in remaining ingredients. Reduce heat and simmer until thickened. Season with salt and pepper before serving.
