ST. LOUIS BLUES PASTA

1 lb penne or other medium pasta shape, cooked al dente
1/2 lb bacon, cooked and crumbled
4 cloves garlic, chopped
1 cup onion, chopped
1 tsp salt
1 lb spinach, chopped and rinsed
1 (14.5 oz) can chicken broth
1 tsp wine vinegar
1 tsp hot pepper sauce
1/2 cup parmesan cheese, grated
Pour off all but 1 tbsp bacon drippings and saute garlic and onion. Sprinkle with salt. Add spinach and stir to coat with bacon drippings. Add broth. Cover and simmer until spinach is tender. Stir in vinegar and hot pepper sauce. Add cooked pasta. Sprinkle with cheese and bacon. Serves 6-8
