SALMON PATTIES

1 (14.75 oz) can pink or red salmon, drained, boned, and flaked OR 1 cup flaked leftover cooked salmon
4 eggs, beaten
1-1/2 cups plain dry bread crumbs, divided
1/3 cup finely chopped onion
1 tbsp chopped fresh parsley
1/4 tsp salt
1/8 tsp black pepper
2 tbsp vegetable oil

In a large bowl, combine the salmon, eggs, 1 cup breadcrumbs, onion, parsley, salt and pepper. Form into patties. Coat the patties with remaining bread crumbs. Heat oil in skillet and put patties in skillet to brown on each side.
