3 (10-12 oz) pork tenderloins
Salt and pepper, to taste
2 tbsp olive oil

Cider Soy Sauce
1 cup sherry or sake
1/2 cup red wine vinegar
1/3 cup soy sauce and balsamic vinegar
2 tbsp very thinly sliced ginger and garlic cloves

Preheat oven to 400. Remove membrane and fat from tenderloins and season with salt and pepper. Heat a large saute pan over high heat, add olive oil and lightly sear meat on all sides. Transfer to an ovenproof pan and roast 8-10 minutes. Let rest 5-10 minutes before slicing.

Sauce: Place ingredients in a large saute pan and simmer all liquid coats to back of spoon, about 20 minutes. Serve over sliced tenderloin.
