FLOUNDER AND VEGETABLES SEALED IN SILVER

2 tbsp parmesan cheese
3/4 tsp dried basil
1/4 tsp garlic powder, salt and pepper
1 tsp minced chives and lemon juice
1 large leek and carrot, julienned
2 large mushrooms, sliced
4 flounder filets

Preheat oven to 400. Combine cheese and seasoning; set aside. In a pan, blanch vegetables in boiling water and cover for 1 minute. Drain, plunge in cold water; drain.

Cut 4 sheets of foil large enough to cover fish. Coat with cooking spray. Lay fish in center and arrange vegetables on top. Sprinkle with cheese mixture. Top with chives and lemon juice. Fold foil over and crimp edges to seal. Place packets on baking sheet and bake for 7-8 minutes.
