FLORENTINE CHICKEN LASAGNA

2 tbsp olive oil
1 lb ground chicken
1 lb mushrooms, chopped
1 clove garlic, crushed
3/4 tsp basil and oregano
1 lb fresh spinach, copped
3 cups ricotta cheese
1 2/3 cups parmesan cheese
1 egg
1/2 tsp salt and pepper
1 lb lasagna noodles, cooked and drained
1 cup shredded mozzarella cheese
1 cup marinara sauce
2 tbsp parsley

Brown chicken. Add mushrooms, garlic, basil and oregano; cook for 10 minutes. Add spinach and cook for another 5 minutes.

In a small bowl, combine ricotta cheese, 2/3 cup parmesan, egg, salt and pepper. Stir until blended. Grease a 13x9 inch baking pan.

Layer noodles, half of ricotta mixture, half of spinach mixture, half of the chicken and 1/3 of the mozzarella and half of remaining parmesan cheese. Repeat layers second time. Add final layer of noodles and remaining marinara sauce. Sprinkle with mozzarella and parsley. Cover with foil and bake at 350 for 1 hour. Let stand for 15 minutes before serving.
