1/2 (9 oz) pkg cheese tortellini, cooked
12 oz shrimp, cooked, peeled and deveined
1 cup quartered cherry tomatoes and cooked broccoli florets
1 can sliced ripe olives, drained
6 oz cubed Colby-jack cheese
1/2 cup Italian salad dressing
Parmesan cheese, to taste
Combine ingredients and toss with dressing. Serves 4
