ROAST PORK LOIN WITH CREOLE SAUCE

1 lb boneless pork loin
1/4 lb bacon
1/4 cup celery, diced
1 medium onion and green pepper, sliced
1 1/2 tsp minced garlic
2 cups crushed tomatoes
1/2 cup beef broth and chicken broth
1 tsp Cajun seasoning

Preheat oven to 350. Place pork on a rack in a roasting pan. Bake until inside temperature is 170 degrees, about 1 1/2 hours.

In a medium saucepan, render fat from bacon. Remove bacon pieces. Add next 4 ingredients and cook just until soft. Add remaining ingredients and reduce heat to a simmer for 30 minutes, stirring frequently. Serve warm over sliced pork. Serves 4
