STRAWBERRY-CHEVRE SALAD

Vinaigrette
1 tbsp raspberry vinegar
1/2 tsp Dijon mustard
1 1/2 tsp chopped fresh tarragon or chives
1/8 tsp salt and pepper
3 tbsp olive oil

Salad
6 cups mixed salad greens
1/2 cup sliced sweet onions
1 cup sliced strawberries
1/3 cup crumbled soft goat cheese
2 tbsp slivered almonds

Whisk together first 5 ingredients of vinaigrette. Slowly whisk in the oil until blended in a slow stream. In a salad bowl, toss lettuce and onions with vinaigrette to lightly coat. Divide lettuce among 4 salad plates. Sprinkle with remaining ingredients.
