STRAWBERRY AND SPINACH SALAD WITH LEMON DRESSING

10 oz fresh spinach, rinsed, drained, stemmed and coarsely chopped
1 lb fresh strawberries, hulled and halved or sliced
Lemon Dressing
1/4 cup sugar
juice of 1 large lemon (3 scant tbsp)
1 egg yolk
6 tbsp oil

Place spinach and strawberries in a bowl. Chill until ready to serve. Place sugar in a medium mixing bowl. Add lemon juice and whisk until most of sugar is completely dissolved. Add yolk and whisk. Add oil, 1 tbsp at a time, whisking constantly until dressing is thick and creamy. Cover and refrigerate.

To serve, rewhisk dressing. Pour over salad and toss gently. Note: May substitute poppy seed dressing and raspberries with raspberry vinaigrette and blueberries and mandarin oranges and kiwi fruit.
