PASTA HAM SALAD

1/2 pkg mini-penne pasta, uncooked
1/2 cup reduced fat mayonnaise
1 tbsp Creole mustard or whole-grain Dijon mustard
2 tbsp buttermilk
Juice of 1/2 lemon
1 tsp kosher salt
1/2 tsp freshly ground black pepper
1-1/2 cups chopped cooked ham
1 pkg grape tomatoes, halved
1 green onion, chopped
1 rib celery, finely chopped
2 tbsp chopped fresh parsley
Green leaf lettuce

Cook pasta according to pkg directions. Rinse under cold water thoroughly. Drain, and set aside. Stir together mayonnaise, mustard, buttermilk, lemon juice, salt, and pepper in a large bowl. Stir in pasta, ham, tomatoes, onion, celery, and parsley. Cover and chill at least 3 hours. Serve on a bed of green leaf lettuce. Serves 4
