TERIYAKI SCAMPI

1 1/2 lbs fresh or thawed large shrimp or prawns
1/3 cup teriyaki marinade & sauce
1 tbsp vegetable oil
1 tbsp butter
1 bunch green onions, thinly sliced
1 large clove garlic, minced
3/4 lb fresh tomatoes, coarsely chopped
1/3 cup minced fresh parsley
Hot cooked rice

Peel shrimp, leaving tails on; devein. Coat with teriyaki sauce; let stand 10 minutes. Reserving 1/4 cup teriyaki sauce, drain shrimp thoroughly.

Heat oil and butter in large skillet over medium heat until butter melts and begins to sizzle. Add green onions and garlic; stir-fry 1 minute. Add tomatoes and parsley; cook, stirring, 3 minutes. Add shrimp; cook 4 minutes, stirring frequently.

Stir in reserved teriyaki sauce and cook until mixture boils and shrimp are pink. Serve over rice.
Serves 6
