1 cup chicken broth
1 tbsp flour
1 tbsp butter
1/2 tsp salt
1/4 tsp pepper
1/4 tsp parsley flakes
1/4 cup whipping cream
1 1/2 lb. flounder or orange roughy

Topping
3 tbsp Parmesan cheese and dry bread crumbs
1 tsp melted butter
1 tsp lemon juice

Bring broth to a boil, blend in flour and butter. Thicken and reduce heat. Stir in spices and cream. Butter pan pour over fish. Bake at 375 for 15 minutes. Sprinkle topping and bake 15 minutes more.
