CHILI VERDE - Crock Pot
Category: Chili
1 large onion and green pepper, sliced
4 cloves garlic, minced
1 tbsp olive oil
4 oz can diced green chilies
1 jalapeno, diced
7 tomatillo, peeled off the husk and coarsely chopped
2 lb pork lean, trimmed and cubed
2 tsp oregano and sage
1 tsp cumin and red pepper flakes
Salt and pepper
1 can beer
Sides: Flour tortillas, salsa, sour cream and grated cheese
Saute first 3 ingredients in oil. Throw into crock pot. Then add next 3 ingredients in the pot. Brown the cubed pork and add to the crock pot, along with the seasonings and beer. Cook all day.
Variations: Wrap all in the tortillas to make a burrito. For caritas, separate the meat from the broth and crisp the meat under the broil and reduce the sauce in the pan before wrapping. For chimichangas, fill and deep fry the wrapped tortillas. Serve sauce over with the other sides. Serves 6
