*GOLDEN BEEF STEW*

1 lb stew meat, cut into bite-size pieces
1 medium onion, chopped
3 tbsp olive oil
1 can Golden Mushroom Soup
1/2 cup dry white wine
1 clove garlic, minced
1/2 tsp each dried thyme and ground cumin
Salt and pepper, to taste
2 medium potatoes, peeled and diced
3-4 carrots, sliced

Brown meat and onion in oil in a Dutch oven. Add soup, seasonings, wine and enough water to generously cover meat. Cover and simmer on low heat for several hours, stirring occasionally and adding more liquid if necessary.

About 1 hour before serving, add potatoes and carrots. When they are cooked and the stew is thick, it is ready. Serve over rice if desired.
