RIGATONI ALLA LASAGNA

1 lb rigatoni, penne or other tube-shaped pasta
2 sweet Italian sausage links, casings removed, crumbled
1 (26 oz) jar marinara pasta sauce
1 cup part-skim ricotta cheese
1/4 cup freshly grated Parmesan cheese
2 tbsp chopped fresh Italian parsley
1/2 tsp freshly ground pepper
Cook rigatoni in large pot of boiling salted water according to pkg directions; drain.
Meanwhile, heat large nonstick skillet over medium-high heat until hot. Add sausage; cook, stirring to break up meat, 3 to 5 minutes or until no longer pink. Place on plate; remove and discard drippings in skillet. Return sausage to skillet; add marinara sauce. Bring to a simmer over medium heat.
Meanwhile, in large bowl, stir together ricotta cheese, Parmesan cheese, parsley and pepper. Toss drained rigatoni with ricotta mixture. Place in serving bowl; top with sauce. Serves 6
