CARIBBEAN PINEAPPLE SALSA

1 cup fresh cilantro, chopped
1 cup pineapple, chopped
2 jalapeno peppers, minced
1/4 cup fresh lime juice
1 cup scallion, minced
Salt and black pepper to taste
1-1/2 cups ripe banana, diced

Combine the cilantro, pineapple, jalapeño, lime juice and scallion. Salt and pepper to taste.

If you are not going to use the salsa immediately, it can be refrigerated for up to one day before completing with the final addition of the banana a few minutes before serving.

NOTE: It is wonderful on fish, pork or chicken.
