SALMON HERB MOUSSE WITH POTATO CHIPS

1/2 lb. poached (or canned) salmon
1/3 cup half-and-half
2 tbsp. lemon juice
2 tbsp. drained, prepared horseradish
1, 8-oz. pkg. cream cheese
2 tbsp. minced green onions
1 tsp. lemon peel
1/2 tsp. dried dill
1/2 tsp. salt
1 tsp. drained capers
1/2 cup crumbled potato chips
Paprika

Combine salmon, horseradish, lemon juice and cream in food processor. Pulse to blend and whip until smooth. Add remaining ingredients, except potato chips, and pulse to blend.

Cover and refrigerate at least 8 hours before serving.

To serve, top with potato chips and a dusting of paprika.

NOTE: This is also good served with crostini or potato chips, or to fill delicate tea sandwiches.
